HONEY BALSAMIC GLAZED CARROTS

Ingredients

• 1 lb carrots, peeled and trimmed

• 2 tbsp balsamic vinegar

• 2 tbsp honey (plus extra for drizzling)

• 2 tbsp olive oil

• 1/4 tsp salt (or to taste)

• 1/4 cup pistachios, roughly chopped

• 2 tbsp pomegranate seeds (for garnish)

• Extra pistachios and honey for finishing

Instructions

1. Preheat the oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Prepare the carrots: Arrange the carrots on the prepared baking sheet.

3. Make the glaze: In a small bowl, whisk together balsamic vinegar, honey, olive oil, and salt.

4. Coat the carrots: Drizzle the balsamic-honey mixture over the carrots, ensuring they are evenly coated.

5. Roast: Place the carrots in the oven and roast for 25-30 minutes, or until tender and slightly caramelized, turning them halfway through.

6. Add pistachios: Sprinkle the chopped pistachios over the carrots for the last 5 minutes of roasting.

7. Finish and garnish: Remove the carrots from the oven and transfer to a serving platter. Garnish with pomegranate seeds, extra pistachios, and a drizzle of honey.

8. Serve: Enjoy as a stunning side dish or light appetizer.
