STUFFED DATES

Ingredients:

  • 12 Medjool dates

  • 1/4 cup peanut butter (or almond butter)

  • 1 tablespoon honey

  • 2 tablespoons unsweetened coconut flakes

  • 2 tablespoons mini chocolate chips

Directions:

  1. Prepare the Dates:

    • Carefully make a small slit along the length of each date and remove the pit. Be sure not to cut all the way through.

  2. Stuff the Dates:

    • Using a small spoon or a piping bag, fill each date with about 1 teaspoon of peanut butter.

  3. Add Toppings:

    • Drizzle a little honey over the peanut butter filling.

    • Sprinkle with coconut flakes and mini chocolate chips.

  4. Serve:

    • Arrange the stuffed dates on a serving platter. They can be enjoyed immediately or refrigerated for later.

  • 1/2 cup soft goat cheese (or cream cheese, mascarpone)

  • 1/4 cup chopped nuts (such as almonds, walnuts, or pistachios)

  • 1/2 teaspoon fresh thyme or rosemary, chopped (optional)

Directions:

  1. Prepare the Dates:
