STUFFED DATES

Ingredients:
12 Medjool dates
1/4 cup peanut butter (or almond butter)
1 tablespoon honey
2 tablespoons unsweetened coconut flakes
2 tablespoons mini chocolate chips
Directions:
Prepare the Dates:
Carefully make a small slit along the length of each date and remove the pit. Be sure not to cut all the way through.
Stuff the Dates:
Using a small spoon or a piping bag, fill each date with about 1 teaspoon of peanut butter.
Add Toppings:
Drizzle a little honey over the peanut butter filling.
Sprinkle with coconut flakes and mini chocolate chips.
Serve:
Arrange the stuffed dates on a serving platter. They can be enjoyed immediately or refrigerated for later.
