COCONUT POACHED WHITEFISH

Ingredients:

  • 1 lemon, sliced

  • Fresh dill, chopped (measured to taste)

  • 5-6 fresh garlic cloves, smashed

  • Grated ginger (to taste)

  • Fresh cod fillets

  • 1 can of coconut milk

  • Rice or grain of your choice!

Instructions:

  1. Sauté Aromatics: In a large pan, heat olive oil over medium heat. Add smashed garlic cloves and grated ginger, sautéing until fragrant.

  2. Add Lemon Slices: Place sliced lemons in the pan.

  3. Layer the Cod: Place the fresh cod fillets on top of the lemon slices.

  4. Add Fresh Dill: Sprinkle the chopped fresh dill over the cod.

  5. Pour Coconut Milk: Pour one can of coconut milk over the fish until the cod is fully submerged.

  6. Poach the Cod: Cover the pan and cook the cod for approximately 10-15 minutes, or until the fish is opaque and flakes easily with a fork.

  7. Serve: I like to enjoy this fish over jasmine or coconut rice!
