COCONUT POACHED WHITEFISH
Ingredients:
1 lemon, sliced
Fresh dill, chopped (measured to taste)
5-6 fresh garlic cloves, smashed
Grated ginger (to taste)
Fresh cod fillets
1 can of coconut milk
Rice or grain of your choice!
Instructions:
Sauté Aromatics: In a large pan, heat olive oil over medium heat. Add smashed garlic cloves and grated ginger, sautéing until fragrant.
Add Lemon Slices: Place sliced lemons in the pan.
Layer the Cod: Place the fresh cod fillets on top of the lemon slices.
Add Fresh Dill: Sprinkle the chopped fresh dill over the cod.
Pour Coconut Milk: Pour one can of coconut milk over the fish until the cod is fully submerged.
Poach the Cod: Cover the pan and cook the cod for approximately 10-15 minutes, or until the fish is opaque and flakes easily with a fork.
Serve: I like to enjoy this fish over jasmine or coconut rice!
